Santiago is a farm coffee grown on the Fazenda São Manuel, a coffee farm located in the Cerrado Mineiro region in the state of Minas Gerais in Brazil, which is renowned for its coffee cultivation. The local coffee farms are organized in cooperatives under the control of the Cerrado Coffee Growers Federation. The farm is located at an altitude of 1,200 meters and is run by Rosa Maria Martins Vitral e Outros. Coffees from Cerrado Mineiro are marked with a special seal to emphasize the high quality standards in the cultivation and harvesting of coffees within the region. QR codes are also affixed to each bag of coffee to enable direct traceability back to the farm. An exemplary measure of transparency in Brazil, the world's largest coffee-growing country.
El Ubérrimo, Nariño
Coffee farmer Francy Liceth Castillo grows this wonderful coffee, Ubérrimo means "the most fertile field". The name was chosen because of the abundant harvest – from the farm that Francy runs together with her parents and five sisters. This Coffee Hero of the rare Geisha variety has been washed fermented. The coffee farm is located in the west of the country in the Nariño region in the Andes. Incidentally, production on Francy's farm focuses on using as few agricultural chemicals as possible in order to preserve the natural microbial life in the soil and thus promote healthy and resilient coffee plants. Francy has been working with geisha plants since 2017.
Finca El Paraiso, Cauca
We are delighted to be working with the legendary Finca El Paraiso from Colombia. This innovative farm is a pioneer in fermentation techniques and has set global standards. Through targeted research in coffee microbiology, the farm has developed its own equipment for the fermentation and drying processes to achieve the results achieved in the laboratory on an industrial scale. The team at El Paraiso Farm has developed the thermal shock technique for fixing aroma precursors in the cell structure of coffee beans, which is used by coffee farmers all over the world.

Winter Blend
Winter has a special atmosphere. And to enjoy it quietly and festively at home, we have created this filter coffee blend for you. In terms of taste, this filter coffee blend has everything you need to have a cup of hygge at home. There are tempting notes of chocolate in the cup, and when slightly cooled it is reminiscent of orange and nut. Yummy!

This year's Winter Blend consists of very special coffees. A washed Geisha and an anaerobically fermented lot provide a complex taste, from juicy red fruits to deep fruity marmalade notes.
Flavours of Winter

This year, our winter coffee series consists of a unique signature blend (Winter Blend), which was roasted by our head roaster Ivo Weller for espresso and filter coffee to create winter flavors such as chocolate, cherry, plum, orange and nut in the coffees. The Flavors of Winter series has been enriching our range for three years now. This year, it includes a very special coffee that is particularly suitable for preparing espresso, espresso-based milk drinks and filter coffee.

Christmas as inspiration

With our winter series, we want to show you new flavors in coffee and at the same time ignite a little Christmas spark. We’ll help you with the preparation – so that it works just like our baristas in our cafés in Berlin. That’s why our Head Barista Valeriia Kutuzova has created a brew guide for our winter coffee.

“In particular, we want people to enjoy our winter coffees, learn more about their respective preparation and spend a cozy time with them. A moment of pure joy with a home-brewed coffee by candlelight, for example,” says Valeriia, describing the idea behind the Flavors of Winter coffees.

Sustainable cultivation and quality awareness
As with wine, the origin, cultivation and careful harvesting of coffee form the basis for a specialty coffee. We only use ripe and hand-picked 100% Arabica coffee beans for our coffees, as the laborious harvesting by hand is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in an environmentally friendly way. This preserves the biodiversity of the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.  
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural aromas can fully develop without any unwanted acidity. To achieve a pronounced body and a versatile taste profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is therefore to exploit the full potential of the green coffee through our roasting method in order to emphasize the valuable work of the producers in the countries where the coffee is grown. These are our quality principles – from source to the final cup.
Our brew recommendation for the V60 hand filter
  • 20g ground
  • 300 ml filtered water at 92° C
  • Bloom for 30 seconds with 60g
  • Then infuse according to the recipe (60g – 60g – 60g – 60g), always wait until the water has completely run through each time
  • Total brewing preparation / technique: 60g – 60g – 60g – 60g – 60g
  • Total brewing time: 3:04 minutes
