Cerro San Luis Micromill, Grecia, West Valley
The Cerro San Luis Micromill is family-run and is located near the town of Grecia in the West Valley of Costa Rica. Two siblings run the two farms La Alquimia and La Galera with their own micromill together with their spouses. The two adjoining farms are located at an altitude of 1200 meters to 1900 meters and are home to various coffee plants such as the SL-28 variety, which is actually typical of Kenya. The entire production process, from cultivation to sealing the coffee bags, is controlled by the family themselves. Incidentally, the West Valley is world-famous for its Arabica beans with balanced acidity and body.
Mundayo Washing Station in Oromia, West Arsi
This wonderful coffee is grown by smallholder farmers at an altitude of between 1945 and 2100 meters, who then bring their harvest to the Mundayo Washing Station in West Arsi in southern Ethiopia for further processing. The Mundayo Washing Station is located in the Oromia region (in the West Arsi zone) and supports around 750 small local farmers. The farmers bring their coffee cherries to the washing station, where they are carefully sorted to remove damaged or unripe cherries. It is a naturally processed coffee that is dried in the sun on African beds for three weeks. Farmers in this region generally do not use fertilizers or pesticides in coffee production as they do not have access to them.
Ol'ochoy Farm, Nandi County
The family-owned coffee farm is located in the highlands of Western Kenya, more precisely in the Nandi County region (Rift Valley) on Monkey Hill at an altitude of over 1900 meters. Coffee farmer Paul Nian (56) works with his family to produce some of the finest microlot specialties in the region on his 30-hectare farm.

The coffees

Cerro San Luis – Costa Rica Honey
This filter coffee seduces with delicious notes of figs, red grapes and a natural sweetness of dried plums. Thanks to the anaerobic honey fermentation, it develops a fruity complexity with an elegant, wine-like effervescence.

Olochoy AB – Kenya Washed
As a filter coffee, Olochoy AB impresses with intense notes of redcurrant, rosehip and cocoa nibs. The cupping profile also reveals subtle nuances of herbs and grapefruit. This washed Kenya convinces with a clear and pure taste – a must for fans of cleanly processed filter coffees!

Mundayo – Ethiopia Natural
This exceptional lot of heirloom varieties delights with its complexity of taste. Depending on the drinking temperature, a kaleidoscope of aromas and an intensely structured cup unfolds. Typically Ethiopian: Notes of strawberry jam, red apple and a floral texture make this coffee a unique pleasure.

Sustainable cultivation and quality awareness
As with wine, the origin, cultivation and careful harvesting of coffee form the basis for a specialty coffee. We only use ripe and hand-picked 100% Arabica coffee beans for our coffees, as the laborious manual harvest is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in an environmentally friendly way. This preserves the biodiversity of the growing region. The coffee cherries can ripen slowly at cool altitudes with nourishing and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural aromas can fully develop without any unwanted acidity. To achieve a pronounced body and a versatile taste profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is therefore to exploit the full potential of the green coffee through our roasting method in order to emphasize the valuable work of the producers in the countries where the coffee is grown. These are our quality principles – from source to the final cup.
